Hi @Simon Cochrane Are you referring to 'white dog' spirit straight from the still (which is technically a vodka) or do you mean whiskies with no age statement or just very young whiskies? Interested to know if you have anything particular on your mind?
I think the aim of NAS (No Age Statement) whiskies is to get the flavours right rather than worrying about whether it's 10, 20, 30, years old, as this gives distilleries complete freedom to mix whiskies from casks of different ages together as they see fit to achieve the best flavour profile. I don't think NAS whiskies will ever replace those of specific ages, there will always be a place in the market for those. I'm not sure it has anything to do with selling whisky before it has matured.
@ahhooper Yes, have to agree. The obvious example of this is the world's biggest selling whisky, Jack Daniels. Their focus is on producing a consistent product for a mass market. Accordingly, depending upon which barrel house is used and which location within that barrel house, is how long a barrel will be left to mature for. No doubt we are talking about a different market to specific age statement whiskies.
